Pho Bo is the heart of our menu. Every morning we simmer beef bones for hours with charred ginger, charred onion, star anise, cinnamon, cloves and cardamom to draw out a clear, deeply aromatic broth — no shortcuts, no powdered base. The result is a bowl that tastes the way pho is meant to taste: fragrant, savoury, and lightly sweet from the bones rather than added sugar.
Choose your combination of rare beef, well-done brisket, beef meatballs, tendon or tripe, all served on a bed of soft rice noodles and showered with fresh green onion and cilantro. A side plate of bean sprouts, Thai basil, lime and fresh chilli arrives at the table so you can build your bowl exactly the way you like it.
