Bun Thit Nuong Cha Gio (menu #32) is one of Lê La's most-ordered vermicelli bowls and a true taste of southern Vietnam. We start with cool rice vermicelli noodles, layer on a generous portion of grilled marinated meat cooked over high heat for a smoky, caramelised edge, then top the bowl with crispy hand-rolled cha gio (Vietnamese spring rolls). Fresh lettuce, cucumber ribbons, bean sprouts, pickled carrot, crushed peanuts and a scatter of fragrant herbs round out every bite.
What sets our bun thit nuong apart is the marinade — a balanced blend of lemongrass, garlic, shallots, fish sauce and a touch of sugar that gives the meat its signature sweet-savoury depth. The dish is finished tableside with our house-made nuoc cham dipping sauce, so you can dress it as light or as bold as you like.
